Sweet Potato Chalupa

My love for Taco Bell needs a whole another post. I'm also guilty of saving their Fire sauce. I've been looking for a good Chalupa recipe for the longest time. I had an idea but I couldn't figure out how to get the flaky crust with out making them so crispy. Roasted sweet potatoes:

  • 2 cups of cubed sweet potatoes
  •  1 tbs of Mexican seasoning
  • 1 1/2 tbs of olive oil
  • 2 cloves of garlic chopped
  • salt
  • black pepper
  • 1/2 tsp of garlic powder
  • 1/2 tsp of oregano 
combine sweet potato with all of the seasoning. Spread equally in a baking sheet making sure not to crowd the potatoes. Bake for 25-35 minutes.

Assemble the Chalupas using refried beans, tomatoes, onion, roasted sweet potatoes & parsley. Top with your favorite taco sauce or salsa and enjoy! you can even add guacamole and/or sour cream. I mean possibilities are endless. Enjoy!
